Apricot, Orange & Miso Glazed Ham with Tangy Yoghurt Sauce

This glazed ham is all about maximum flavour with minimal fuss – ham is smothered in a glossy apricot, orange & miso glaze that turns sticky, golden and fragrant. It’s paired with a cool, tangy yoghurt sauce made from the reserved glaze, Dijon and lemon – perfect for cutting through the rich, salty ham. Served warm or cold, it’s an easy savoury showstopper for any festive summer table.

Ingredients

  • 1 cup apricot jam 
  • ½ cup orange juice 
  • ¼ cup brown sugar 
  • 2 tbsp wholegrain mustard 
  • 1 tbsp white miso paste 
  • 1 tbsp apple cider vinegar 
  • 1 tsp soy sauce 
  • Salt and pepper to taste
  • 4kg cooked ham on the bone
  • Whole cloves (optional)

For the sauce

  • 1/2 cup reserved apricot glaze mixture
  • 1 cup Re Yoghurt natural probiotic
  • 2 tbsp dijon mustard 
  • 2 tbsp fresh lemon juice 
  • 2-3 tbsp pan juices from the ham (optional)
  • Salt and pepper to taste

 

 

Instructions:

  1. For the glaze, mix apricot jam, orange juice, brown sugar, wholegrain mustard, miso, vinegar, soy sauce, salt and pepper in a small saucepan. Warm over medium heat, stirring until the jam melts and everything is smooth, then simmer for 5-7 minutes until glossy and slightly thickened. Set aside ½ cup of the glaze for making the sauce later.
  2. Prepare the ham by removing the skin, scoring the fat, and adding cloves if you like. Place the ham in a large oven dish on a small piece of baking paper to prevent sticking. Bake at 160°C, brushing generously with the glaze every 15-20 minutes for about 2 hours, until golden and caramelised.
  3. Near the end of cooking, make the sauce by mixing the reserved ½ cup glaze with the yogurt, Dijon mustard and lemon juice. Once the ham is cooked and resting, stir in a little of the warm pan juices to loosen the sauce to your liking.
  4. Serve the sliced glazed ham warm or cold with the yogurt mustard sauce.
