Berry Yoghurt Granola Cups

A nourishing make-ahead breakfast or snack, made with Re Dark Berry probiotic yoghurt.

These crisp granola cups are lightly spiced, naturally sweetened and perfect for filling with our creamy yoghurt and fresh berries. They’re great for make-ahead breakfasts, brunch platters or a simple, healthy snack.

Ingredients

  • 2 cups rolled oats
  • ½ cup desiccated coconut
  • ⅔ cup ground almonds
  • ¼ cup maple syrup or honey
  • ⅓ cup melted coconut oil
  • 1 tsp vanilla extract
  • ½ tsp cinnamon
  • ¼ tsp fine salt

To serve

  • 1 400g Re Dark Berry probiotic yoghurt
  • Fresh berries (strawberries, raspberries, blueberries, blackberries)
  • Extra honey, to drizzle

Instructions:

  1. Prepare granola base
    Preheat the oven to 180°C and lightly grease a 12-hole muffin tin. In a large bowl, combine the oats, coconut, ground almonds, cinnamon and salt. Add the maple syrup or honey, melted coconut oil and vanilla, then mix well until evenly coated.
  2. Shape granola cups
    Divide the mixture evenly between the muffin tin holes. Use the back of a spoon or your fingers to press firmly into the base and up the sides to form cup shapes. (Press the mixture firmly into the tin - compacting it well helps the cups hold their shape once baked and cooled.)
  3. Bake and cool
    Bake for 18-20 minutes, or until lightly golden. Remove from the oven and allow the granola cups to cool completely in the tin - they will firm up as they cool.
  4. Fill and Serve
    Once cooled, carefully lift the cups out of the tin. Fill each with a generous dollop of dark berry yoghurt, then top with fresh berries, and finish with a drizzle of honey just before serving. Serve immediately once filled, or store any unfilled cups in an airtight container for up to 3 days until ready to use.
